Ingredients
- 2 tablespoons olive oil
- 2 diced ribs celery
- 1/2 diced red onion
- 1/2 diced red bell pepper
- 1/2 diced green bell pepper
- 1/2 diced yellow bell pepper
- 1/2 diced orange bell pepper
- 1 diced jalapeno
- 4 minced garlic cloves
- 1 pound peeled deveined shrimp
- 1 pack chopped cajun sausage
- 1 pound chopped chicken
- 3 tablespoons old bay
- 3 cups of chicken broth
- 1 28 ounce can crushed tomatoes
- 2 cups of rice
- 1 tablespoon paprika
- 1 tablespoon oregano
- 1 tablespoon thyme
- 1 tablespoon garlic powder
- 1 tablesppon onion powder
- 1tablespoon cayenne
- 2 bay leafs

In large pot with lid add your chopped sauage, seasoned with one tablespoon of old bay, on medium heat. Cooked until brown. remove and set aside.

Add 1 table spoon of olive oil, sauté all veggies (expect can tomatoes) until tender.

Add chopped chicken, seasoned with old bay to jambalaya. Also add one table spoon of olive oil. Add sausage back into pot. Cook jambalaya until chicken is no longer pink.

Next add in chicken broth, crushed tomatoes, rice, and seasonings to jambalaya (all expect old bay).

Cover pot with lid and cook jambalaya on medium low.

Cook until rice is tender in jambalaya. Stir jambalaya every five minutes.

Once rice is cooked, fold in shrimp into jambalaya and remove from heat. Cover for an additional 5 mins.

- 2 Pounds of Catfish
- Vegetable oil

Season catfish with old bay.

Rub catfish with mustard.

Fry catfish in vegetable oil for on high heat for 3-4 mins.
